Southern Pecan Coffee and Chef Hootie’s Cajun Seasoning are unique products that bring our hometown of Lake Charles, Louisiana, into your kitchen. Southern Pecan Coffee

This product is perfect for quiet mornings before work or for relaxing with friends after a hunt. Reminiscent of a homemade breakfast, warm pecan flavor is enhanced with hints of cinnamon and nutmeg for a truly southern palate. Available as grounds or whole beans in 8 oz bags.

 Chef Hootie’s Cajun Seasoning

This product is inspired by Murphy Cormier’s love for cooking. Most often, his dishes are made from scratch with his own home grown produce and wild caught game. With just enough spice to make it interesting, this blend will make any dish pop, especially when using fresh-from-the-garden vegetables.

Coffee Recipes

     Hootie’s Honey Iced Latte

Brew a few cups of Southern Pecan Coffee and allow to cool. Pour into a large glass or metal jar and store in the refrigerator overnight (at least three hours). Grab a glass or travel mug and drizzle honey along the sides. Fill the glass with ice. Pour your favorite milk into glass, 1/4 of the way full. Top off the glass with the Southern Pecan Coffee and stir.

                       Hootie’s Hint: Use a hazelnut creamer instead of milk for a richer flavor!

Hootie’s Head Start     

Brew a single serving or a few cups of Southern Pecan Coffee. While brewing, add a teaspoon of cinnamon to your favorite mug. Pour the coffee over the cinnamon, until 3/4 of the way full and stir. Pour or dispense whipped cream on top, then sprinkle a teaspoon of cinnamon to garnish.

                    Hootie’s Hint: Add a teaspoon of vanilla extract to your coffee for a sweeter aftertaste!

Seasoned Snack Suggestions

   Chef Hootie’s Homemade Potato Chips

Wash two russet potatoes well until the water runs clear. Thinly slice the potatoes (the thinner the slices, the crispier the chip!) using a mandolin. Once all your potatoes are sliced, wash again with cold water until it runs clear. Lay out all the slices on a drying rack and press with paper towels until completely dry (pictured here ->). 

Cover the bottom and sides of a stainless steel or glass mixing bowl with olive oil, then dust the oil with Chef Hootie’s Cajun Seasoning. Once your slices are dry, place some of them into the bowl. To help evenly mix, add more olive oil and seasoning once the bottom is covered with slices. Using a spatula or your hands, mix the slices until evenly coated.

Place a layer of the potato slices in the air fryer and cook for at least 20 minutes at 350 degrees Fahrenheit, or until golden brown. Longer cook times will yield crunchier chips. After cooking, season immediately with salt and more Chef Hootie’s Cajun Seasoning. Allow to cool for ten minutes and enjoy! Makes enough for 4 servings.

Hootie’s Hint: Add a touch of lime juice with the seasoning mixture for an extra tang!

Sliced-n-Spiced Cucumber   

Wash and then skin a cucumber. Slice the cucumber, removing the ends. Place the slices in a bowl and dust generously with Chef Hootie’s Cajun Seasoning. Add a teaspoon of salt and a teaspoon of sugar. Mix with a spatula or hands until evenly coated. Place the slices into a glass jar or any container with a lid, then fill the container 2/3 of the way with white vinegar. Top off the jar with water. Allow the mixture to sit in the refrigerator for at least an hour. Drain the liquid out of the container, then lightly dust the slices with more of Chef Hootie’s Cajun Seasoning. Enjoy chilled. Makes two servings.

Hootie’s Hint: For longer storage, place slices into a closed mason jar to preserve crunchiness!

     Branch Ranch

Take approximately 2 cups of your favorite ranch dressing and place in a mixing bowl. Grab your favorite hot sauce and measure out 4 tablespoons, pouring into the same mixing bowl. Mix thoroughly. Measure out 1/3 cup of Chef Hootie’s Cajun Seasoning. Fold in the seasoning a bit at a time, mixing constantly to keep it even. Enjoy! This goes great with a vegetable tray or as a new dip option for wings and tenders.
